Sussex Charmer is a truly unique recipe based on cheddar and Parmesan cheese, created using Harrison and Sons’ milk produced in Rudgwick near Horsham, West Sussex. The recipe comes from Rob Bookham’s extensive knowledge of the cheese making process and the name ‘Charmer’ comes from mixing the names ‘cheddar’ and ‘Parmesan’
A mild, semi-soft cheese with a mellow blue flavour and a slightly salty finish from High Weald Dairy in Horsted Keynes, West Sussex. The blue green veins deepen as the cheese matures, and the taste of the blue strengthens. It has an attractive natural edible rind and has won numerous awards including a Super Gold at the World Cheese Awards 2017-2018
This is a hard farmhouse cheese that has been naturally smoked over oak chippings by the award winning Weald smokery. Creating a rich, full bodied and pleasant toasted aroma. The cheese uses Free Range raw cows milk from Kingcott Dairy. Maturation Period: Four months
